Rory O’Connell has been teaching people to cook for more than 30 years, ever since he co-founded Ballymaloe Cookery School with his sister, Darina Allen. He worked for many years with Myrtle Allen as chef at The Ballymaloe House Hotel in Cork as well as with Alice Waters at Chez Panisse in California.
When I go into the garden, I immediately switch off from work. There’s a different emotional involvement when I’m in the garden compared to when I’m in the kitchen. Nature amazes me. I find it incredibly grounding and miraculous that things grow out of the ground.
